2021 Fionna Vineyard - Sauvignon Blanc
Los Carneros, Napa Valley
On the palate: Mellow aromas of acacia and peach juice. White rose, lemon-lime, and vanilla bean, with a soft and lingering finish reminiscent of apricots and white plums. Delightful now, the wine will gain complexity over the next year and reach its apogee from 2023-2024.
We gently whole-cluster press the juice to our concrete egg, and ferment the wine on native yeast for five weeks. The wine then ages seven months in French oak barrels (18% new) and stainless steel. We perform a light pad filtration (solely for clarity) and cold stablization prior to bottling by hand at the winery, with minimal sulfur.
