2010 Cabernet Sauvignon MAGNUM

This is a delicisously ripe Cabernet Sauvignon from a steeply sloping southeastern facing hillside at 1000 feet. We harvested on November 5, by hand, at dawn, with miniscule yields less than 2 tons per acre, and performed a vigorous cluster-sort prior to fermentation in a temperature controlled stainless steel tank. Maceration lasted 21 days, followed by malolactic fermentation in barrel. The wines aged for twenty months in 80% new French oak barrels.
