2016 Rosé de Saignée
Every year we produce a tiny amount of rosé. It is a labor of love. The saignée method in which we make this wine is the practice of removing some of the juice from the just-crushed grape must in order to more deeply concentrate the phenolics, colour and flavor of another red wine (in this case that would be the 2016 Merlot, which is so much the better for having been bled). The 2016 Rosé de Saignée is 100% Merlot fermented and aged eight months in a neutral American oak barrel. Typical of our style, this rosé is robust with strawberry, lilac, and subtle citrus notes.
