2014 Crosby's Reserve
Crosby’s Reserve is a barrel selection of Cabernet Sauvignon and Merlot aged for thirty months in all new French oak. The fruit is sourced from the foothills of the Vaca Mountain with yields less than two tons per acre, then sorted and destemmed by hand into new French oak barrels for extended maceration. The 2014 fermented for an average 49 days in wood, and was pressed by hand in our old, small hand-crank press. The result is an extremely concentrated and plush style of Cabernet, which despite the ripeness of our fruit, includes subtle woodsy and mellow pyrazines -- which we believe are absolutely necessary in a varietally correct Cabernet Sauvignon. The overall impression is of a wine that displays a depth of complexity, purity of fruit and concentration, with wholly-absorbing and intriguing flavors of charred strawberries and mixed berry puree, vineleaf and vanilla, milk chocolate and cherry cola, with sweet tannins that finish on notes of cassis.
